		This cuvée is a must-have from our estate. Its name, 'Mes Racines' meaning 'My Roots', is a reference to our ancestors, as it is the recipe of our founder, Alfred Tritant. The label features his hands, which he used to hold behind his back.
Fullness & Gourmandise
This cuvée has a bright golden colour with slightly coppery highlights. The effervescence is lively and consistent.
The initial nose is expressive, marked by iodine and honey aromas, and candied fruit (orange, apple) and fruit paste. It then opens up to complex notes of blond tobacco, caramel and spices (cinnamon, star anise).
The attack on the palate is full-bodied and rich (notes of coffee and hazelnut) with a lovely freshness and aromas of orange, grapefruit and ginger. The palate then offers rounder notes of brioche, vanilla pastries and gingerbread. The finish is warm, with a beautiful texture on the palate, offering notes of fruit brandy and fruit paste.
This wine pairs perfectly with mature hard cheeses (Comté, Parmesan), sweetbreads with morel mushrooms, and pan-fried foie gras with orange confit.
